From Turkey to the U.S.: A Journey of Hardship, Resilience, and Culinary Innovation

Tony Turkset’s  journey began in Turkey, where he experienced a profound loss at just ten years old when his mother passed away, leaving him and his siblings in the care of their father. A year later, the family moved to the United States in search of opportunity, only to face the harsh realities of life in a new country. They lived in a small, crowded apartment, barely making ends meet, and Tony quickly learned the meaning of perseverance.

Despite the challenges, Tony refused to let his circumstances define him. While attending high school, he worked multiple jobs, determined to support his family and build a better future. During this time, he cultivated a passion for fitness and nutrition, inspired by the meals his mother had prepared—healthy, flavorful, and made with love. Tony began lifting weights, following structured meal plans, and studying the science of balanced nutrition, laying the foundation for his future endeavors.

In early adulthood, Tony and his brother-in-law took a leap of faith by opening a hookah lounge. Financial difficulties were constant, and for seven years, the business barely broke even. Yet Tony’s determination never wavered. He noticed that many customers were curious about health and wellness but lacked guidance, inspiring him to offer advice and healthy meal options. Using his mother’s recipes as a base, Tony created nutritious meals that were flavorful, satisfying, and approachable, proving that healthy eating could be enjoyable.

In 2015, Tony and his brother-in-law ventured into the restaurant industry by opening Hummus Mediterranean. Initial months were tough, and the business faced the risk of closing. However, a turning point came when word-of-mouth and curiosity drew crowds to their restaurant. The restaurant gained traction quickly, allowing Tony and his team to close the hookah lounge and focus on expanding Hummus Mediterranean. Investments in staff, equipment, and menu innovation reinforced their commitment to quality and service, earning rave reviews from customers who noted improvements in health, energy, and well-being.

Around the same time, Tony’s wife, Liana—a fitness competitor—began preparing meals for her clients using the restaurant’s kitchen. Recognizing a growing demand for convenient, nutritious meals, Tony and Liana launched Hummus Fit, combining their culinary and fitness expertise. They initially offered custom meals but soon standardized a menu of 40–50 options catering to various dietary needs. The business quickly thrived, thanks to their dedication to quality, customer engagement, and community outreach.

Liana’s creativity further elevated Hummus Fit with innovations like “Buffin Muffins,” which combined protein and muffins into a healthy, delicious snack. The COVID-19 pandemic presented challenges that might have crippled other businesses, but Tony and Liana adapted by expanding delivery, partnering with local gyms, and maintaining staff employment, exemplifying resilience, strategic thinking, and compassion.

The synergy between Tony and Liana has been central to their success. Their complementary skills—Tony’s operational expertise and innovative mindset paired with Liana’s product development and culinary artistry—have transformed Hummus Fit into more than a meal service; it is a lifestyle brand focused on health, wellness, and community.

Today, Hummus Mediterranean and Hummus Fit continue to grow, with plans to expand their reach, launch wellness programs, and further integrate fitness and nutrition into everyday life. Tony and Liana remain committed to giving back to their community, supporting causes related to health, education, and hunger. Their story is a testament to perseverance, innovation, and partnership—a powerful reminder that resilience and vision can transform hardship into lasting impact.

Success isn’t about avoiding failure—it’s about learning from it, turning hardship into opportunity, and refusing to quit when life gets tough. Those early struggles shape our mindset, our work ethic, and our character, giving us the tools to face anything that comes our way.

I have proudly owned and operated a business in our community for the past 10 years, serving local residents and contributing to its growth and vitality. My decade-long experience reflects a deep commitment, strong relationships, and a dedication to providing exceptional service that supports and strengthens the community.

Seeing their growth and happiness drives me to become a better person, both professionally and personally.
